Dish fit for a King: King Scallop Stacks with Mustard Sauce (cooked in the wood-fired oven)

The second part of our Dish Fit for a King for the Coronation 2023 is this wood-fired dish, ideal for lovers of seafood who want to cook this treat in their wood-fired oven. Of course, not every wood fired oven can cook such delights: out artisan, Italian ovens by Valoriani can!

Ingredients

King Scallops

Good quality Black Pudding

Pinch fresh parsley

Pinch of fresh thyme

1 tbsp of olive oil

Salt and pepper to taste

For the sauce

2 x tablespoons English Mustard

150ml double sream

½ tablespoon Sherry

½ tablespoon of Champagne

½ tablespoon Worcestershire sauce

Salt and pepper to taste

Method

For the sauce, cook in an ovenproof pan 

Place the pan in the mouth of the oven, so it is warm not hot

Mix the ingredients in the pan and simmer gently until thickened.

Place 1cm thick slices of black pudding onto an ovenproof tray 

Place the scallops on an ovenproof tray and season with the herbs and condiments.

If the oven is very hot, with a lot of flame, keep the cooking pots and trays to the front for gentle cooking. If the oven is cooler, with lower or no flame (residual heat) the pots and pans can go further into the warmer part of the oven.

The black pudding will need around 7/8 minutes and the scallops 4/5 minutes. The scallops need turning once.

Stack the scallop on top of the black pudding and drizzle sauce over both.

To make this recipe slightly more substantial, stack the pudding and scallop onto a bread crostini.
