Dish Fit for a King: Wood-fired Summer Fruit Celebration

The sweet element to our Coronation 2023 menu is a summer fruit medley that truly celebrates the best of British summer fruits and has a regal summer festive feel. Think you can’t cook summer fruits in a wood-fired oven? Our recipe proves that you can and that it can be absolutely delicious! Give it a go, whether it’s for a Coronation Big Lunch or a big lunch served, at any other time, in your back garden.

Ingredients

Strawberries

Raspberries

Blueberries

Apricots

Lemon

Lime

Runny honey 

2 tablespoons brown sugar

Glasses of Champagne 

A double whiskey

200ml Marsala wine

Method

Remove the green leaf from the strawberries and then sit them pointy side up in a large enamel ovenproof dish.  

Add the remaining fruits, sprinkled around the strawberries

Pour the Marsala (or Pimms or sherry), whiskey and Champagne over the fruit

Squeeze a whole lemon and a whole lime over the top of the fruit

Sprinkle the brown sugar over the fruit and then lightly drizzle over the runny honey

Cook in a hot oven until the tops caramelise and the sauce bubbles.

Serve in a bowl with clotted cream or ice cream
